AMISH SUGAR COOKIES
1 cup white granulated sugar 1 cup confectioners' sugar 1 cup butter, softened 1 cup vegetable oil 2 large eggs 4 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon cream of tartar 1 teaspoon vanilla extract White or colored sugar (for topping)
Preheat oven to 375 degrees F. Lightly grease baking sheets.
Combine and beat first two sugars, butter and oil until very creamy. Add eggs; beat well.
In a clean bowl, stir together the flour, baking soda, cream of tartar, and vanilla extract. Stir dry ingredients into the creamed mixture until well blended. Drop by teaspoonfuls onto cookie sheet, leaving about an inch between cookies. Flatten dough with the bottom of a glass dipped in sugar. Or, flatten dough and sprinkle lightly with white or colored sugar.
Bake 10 to 12 minutes at 375 degrees F until lightly browned on the bottom.
