ALMOND COOKIES

1 cup butter, softened
1 cup powdered sugar
1 egg
1 tsp. almond extract
2 1/2 cups flour
1 tsp. cream of tartar
1/2 tsp. baking soda

Cream butter, sugar, and egg together. Add almond extract. (Vanilla may be substituted.) Sift in flour, cream of tartar, and baking soda. Mix and chill for several hours or overnight.

WHEN READY TO BAKE:
Use cookie press desired and put on a cookie sheet. If dough is too stiff for the cookie press, set aside until room temperature.

Bake at 350 degrees for 8 to 10 minutes.

VARIATIONS:
Dough may also be rolled into balls, bake and then roll in powdered sugar when cool.

Dough may be divided and various food colors added, depending on holiday. Decorate before baking with colored sugars, nuts, chocolate stars, etc.
