BLACKBERRY COBBLERFOR THE BATTER:1 cup all-purpose flour
1 tablespoon baking powder
1 cup granulated sugar
1 pinch salt
1 cup evaporated milk
1 teaspoon vanilla
FOR THE FILLING:3 cups blackberries (fresh or frozen)
1 tablespoon cornstarch
1/2 cup boiling water
3/4 cup granulated white sugar
2 tablespoons butter (1/4 stick)
1 teaspoon ground cinnamon
Preheat oven to 350 degrees F. Grease a 9x13-inch pan.
TO PREPARE THE BATTER: Combine flour, baking powder, sugar, salt, milk and vanilla. Pour into pan.
TO PREPARE THE FILLING: Combine berries, cornstarch, water and sugar. Pour slowly into the middle of cobbler batter. Dot with butter; sprinkle with cinnamon.
Bake 45 to 55 minutes or until crust is firm and lightly browned.
