Good morning. Karyn, everything you are doing is correct. I do it that way also. The only thing I can say is that it is well known that on humid days is not the time to bake meringue pies, why, because on humid days the sugar attracts the excess moisture in the air& it doesn't all evaporate in the baking, hence the weeping when ordinarilly it would not weep. I have no idea if that is the case where you live.
In any event Karyn, I have this solution for you. Prof. bakers use this technique in meringue pies. just mix 2 teas of cornstarch with 1/3rd cup of COLD water then heat till boiling & thick,& then at the end of whipping beat in with the whites. Just use approx 2/3rds of this solution for one 9, inch pie.
