COLOSSAL CHEESECAKE

5 packages (8 oz each) cream cheese, softened
1 cup sugar
5 eggs
1 cup heavy (whipping) cream
2 teaspoons pure vanilla extract
1 teaspoon grated lemon peel
2 teaspoons grated orange peel
2 tablespoons fresh lemon juice
3 tablespoons fresh orange juice

Preheat oven to 300 degrees F. Grease a 9-inch springform pan.

Cream together cream cheese and sugar. Add eggs, one at a time, beating after each addition. Blend in heavy cream, vanilla, peels and juices until smooth. Turn into prepared pan and set in a larger pan filled with 1 inch of water. (Or, if spring-form pan is not watertight, place a pan filled with 1 inch of water on a rack under spring-form pan.)

Bake in preheated 300 degree F oven 40 minutes. Reduce heat to 325 degrees F; bake 20 minutes longer, or until cake is set. Cool in springform pan.

Remove sides of pan. Chill, or serve at room temperature.
