I too have been looking for a good recipe for the Diplomat cookies (also know as Imperial cookies). These are the closest to 'Breadwork's recipe' I've found and tried 6 different recipes!!!) But they are addictive are they?
DIPLOMAT COOKIES
FOR THE COOKIE DOUGH: 1/2 cup butter or margarine, softened 1/2 cup granulated white sugar 1/2 cup brown sugar 1 egg 1/2 cup milk 1 tsp. almond extract 3 cups flour (and more, as needed) 2 tsp. cream of tartar 1 tsp. baking soda 1/2 tsp. salt FOR THE FILLING: jam FOR THE ICING: Icing (confectioner's) sugar milk or water almond extract
In large bowl (mixer) cream butter, white sugar, and brown sugar together. Beat in egg. Add milk and almond extract.
In second bowl mix together 3 cups flour, cream of tartar, baking soda, and salt till well mixed. Gradually add dry ingredients to wet, until all mixed.
Roll out on a well floured surface - keep adding additional flour so that your rolling pin does not stick. Cut out in rounds and place on lightly greased baking sheets (one for baking cookie tops and one for baking bottoms).
Bake in preheated 375 degree F oven for about 8 minutes for bottoms and 6 minutes for tops. Cool bottoms slightly and spread with jam.
While baking tops, mix confectioner's sugar and water with a bit of almond extract - make it slightly runny .
Dip slightly cooled tops in icing and place on the jam filled bottoms and let cool completely.
