Betsy - have you ever tried spraying the hot iron before that first one? Even though my iron press is coated, I had thought about spraying it lightly this year to see if it wouldn't stick.

I also use almond extract sometimes - that's good too, as well as the plain vanilla and anise - I think the anise is the traditional flavor used by Italians.
