Use a recipe with a denser batter and fill the mould almost to the top ..
1. fill 1/2 full to reach the top of the mould 2. fill 2/3-3/4 full to dome the top nicely 3. fill 3/4 -7/8 fuul to "mushroom" BUT the batter has to be denser, so it won't collapse before it sets
