ORANGE STREUSEL COFFEE CAKE

2 cups sifted all-purpose flour
1 teaspoon salt
1/2 cup sugar
2 teaspoons baking powder
1 tablespoon grated orange rind
1 egg, slightly beaten
1/2 cup milk
1/2 cup orange juice
1/3 cup Mazola Salad Oil
Streusel Topping (recipe follows)

Mix and sift first four ingredients into a bowl. Add the grated orange rind. Make a well and add remaining ingredients. Stir only enough to dampen flour (batter should appear lumpy). Turn into greased (10-inch) pie pan or 2 greased (8-inch) pie pans. Sprinkle with Streusel Topping.

Bake in moderate oven (375 degrees F.) 35 minutes or until brown.

STREUSEL TOPPING:
Mix 1/4 cup flour, 1/2 cup sugar in bowl. Cut in 2 tablespoons butter or margarine with a pastry blender or 2 knives until the consistency of corn meal.

VARIATION:

CINNAMON COFFEE CAKE:
Follow recipe for Orange Streusel Coffee Cake. Omit the grated rind and orange juice. Increase milk to 1 cup. Sprinkle with Cinnamon Topping.

Cinnamon Topping:
Prepare Streusel Topping as above adding 1 teaspoon cinnamon to the dry ingredients.
