I had some bananas to use up, and when I went to make the bread, I saw my DH had left some peanut butter on the counter...so I thought, hey! that could work... Well, it didn't last long, so I guess that means I need to post it!

PB AND BANANA BUTTERMILK BREAD

1/2 cup brown sugar
2 tbsp butter, softened
2 tbsp oil
1 egg
3 mashed bananas, soaked in about 1/2 cup of coffee
1/2 cup (or so) peanut butter
1/2 cup buttermilk
1 1/2 cups nutriflour (or whole wheat flour)
1/4 cup oatmeal, uncooked (I used instant)
1 teaspoon baking soda

Preheat oven to 350 degrees F. Grease a 9x5 inch loaf pan.

Cream brown sugar, butter, and oil until fluffy. Add egg, banana mixture, peanut butter, and buttermilk.

Add flour, oats, and baking soda to the creamed mixture, using just a few strokes to incorporate the wet and dry ingredients. Pour batter into greased loaf pan.

Bake for 1 hour, or until it tests done when a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes. Remove from pan and allow to cool completely on a wire rack.

Makes 1 loaf
