I realize that this in not the recipe you are looking for but it is a date cake that we have enjoyed for years and perhaps you could work with it to get something close to the one you remember.
WEST HAVEN CAKE
1 (8 oz.) package pitted dates 1 tsp. baking soda 1 cup hot water 1/2 cup shortening 1 cup sugar 1/4 tsp. salt 2 eggs 1 tsp. vanilla 1 3/4 cup flour 1 Tbsp. cocoa powder 1 cup coarsely chopped walnuts 1 small package (6 oz. or 1 cup) chocolate chips
Cut dates in thirds. Pour over them: 1 tsp. soda dissolved in 1 cup hot water. Set aside.
Cream together shortening and sugar. Add salt, eggs, and vanilla. To this add flour sifted with cocoa powder alternating with liquid off dates; mix well after each addition. Add dates.
Pour into a 9x13-inch greased pan and sprinkle with walnuts and chocolate chips; press lightly into surface of dough.
Bake at 350 degrees F for 45 minutes.
Best served with sweetened whipped cream. |
