CAJUN PECAN PIE

2 unbaked pie shells
2 cups packed dark brown sugar
1 tbsp butter, softened
4 tbsp flour
2 cups corn syrup
1 tbsp bourbon
6 eggs, beaten
1/4 tsp salt
1 tsp pure vanilla extract
1/4 tsp ground cinnamon
2 cups pecans

Pre-heat oven to 425 degrees F.

In a large bowl, combine butter and sugar with a whisk, blending well. Add flour, whisking steadily. Add syrup, bourbon and eggs and whisk until well blended. Add salt, vanilla and cinnamon. Fold in pecans. Pour into pie shells.

Bake for 45 minutes. Remove from oven and allow to cool.

Makes 2 pies
