Hi Dianna, I know this is pretty late, but I hope you try these recipes sometime. I use them all the time at work.

Cinnamon Swirl Muffins

CINNAMON SWIRL:
1/4 cup all-purpose flour
1/2 cup brown sugar, packed
1/4 cup butter or margarine, softened
2 tsp. cinnamon

MUFFINS:
2 1/2 cup all-purpose flour
1/2 cup sugar
2 tsp.baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 cup butter or margarine , melted
2 eggs
1 1/4 cup buttermilk
1 tsp. vanilla

Grease 6 Texas sized muffin tins , set aside.
Preheat oven to 400 F.

Make the cinnamon swirl ; combine all ingredients for swirl, using a pastry
blender, cut in the butter until crumbly. Set aside.

Make the muffins ; combine all the dry ingredients in a large bowl , using a whisk , mix well.
In another bowl , beat the eggs and add the rest of the wet ingredients, whisking well to combine.
Add the wet ingredients to the dry ingredients , mixing with a spatula or a wooden spoon only until all flour is moistened. Stir in the cinnamon swirl with the wooden spoon , DO NOT OVERMIX. Spoon batter into greased Texas muffin pans.

Bake texas sized muffins in a preheated 400 F. oven for 20 minutes or until light brown on tops and center is done ( check with a toothpick if not sure ).

These are great if you like cinnamon rolls, but these are not as sweet !!!

Oatmeal Streusel Muffins

STREUSEL :
1/3 cup oats ( quick or old fashioned )
1/4 cup all-purpose flour
1/4 cup brown sugar , packed
3 TBSP. margarine, chilled

MUFFINS :
1 1/2 cup all-purpose flour
1 cup oats ( same as above )
1/2 cup sugar
1 TBSP. baking powder
1/4 tsp. salt
1 cup milk
1/4 cup vegetable oil
1 egg, beaten

Preheat oven to 400 F. Grease 12 regular muffin tins or 6 Texas sized muffin
tins. Set aside.

For streusel ; combine flour, oats, & brown sugar. Cut in the butter with a pastry blender or two knives until mixture is crumbly. Set aside.

For muffins ; Combine dry ingredients in a large bowl ; using a whisk , stir until well combined.
In another bowl, combine the beaten egg with the milk and vegetable oil and whisk until well combined.
Add egg mixture to large bowl with the flour mixture ,stir with a spatula or a wooden spoon just until combined.Fill the prepared muffin cups ; dividing
batter evenly. Sprinkle the streusel topping over each batter filled muffin cup.
Bake muffins at 400 F. for 18-20 minutes or utnil golden brown and center is set. Let stand a few minutes before taking muffins out of the pans.
