PEANUT-BUTTER BRAN MUFFINS
1/4 cup peanut butter 1/3 cup molasses 1 egg 1 1/2 cups milk 1 1/2 cups bran flakes 1 cup raisins 1 1/2 cups sifted all-purpose flour 1 teaspoon salt 4 teaspoons baking powder 2 tablespoons sugar 2 tablespoons melted margarine, slightly cooled
Heat oven to 375 degrees F. Grease 12 muffin tins.
Cream peanut butter, beating well in electric mixer. Gradually blend in molasses. Beat in egg; add milk, bran and raisins; mix and let stand until most of the milk is absorbed by the bran flakes.
Sift together flour, salt, baking powder and sugar. Make a hollow in the center of the dry ingredients; add milk mixture and the melted margarine. Stir only until all the flour is dampened. Divide among 12 muffin tins.
Bake about 25 minutes, or just until toothpick inserted into the center of a muffin comes out clean.
