Dianna: Just saw your request. I have been using a "Texas" size muffin pan for quite a few years and here are a couple of muffin recipes that I use a lot.
BASIC BREAKFAST MUFFINS
2 cups all purpose flour 1/4 cup sugar 2 tsps. baking pdr. l/2 tsp. salt 1 cup milk 1 egg 1/4 cup oil OPTIONAL: 1/2 tsp. almond extract or any flavor you desire 1/2 ro 3/4 cup mini-choc. chips, raisins, dates. 1 cup fresh berries that you have mixed with 1 tbsp. flour. 1 cup chopped or whole cranberries with 1/2 cup add'l. sugar. l tsp. cinnamon, extra 1/4 cup sugar, l cup peeled, shredded apples, and 1/2 cup dark raisins.
Preheat oven to 425* and prepare muffin pans.
Beat together flour, sugar, baking pdr. and salt. Add milk, egg, oil and flavoring and beat together to blend. Fold in chips or fruit. Spoon into muffin cups and bake for 20-25 min., or til they test done with a toothpick.
Cool in pan approx. 10 min., then remove to rack.
Makes 6 Texas muffins. Recipe may be doubled. As you can see, these are very versatile. I often sprinkle the tops with cinn./sugar before baking, or add a streusel topping. They are just about fail-proof.
EXCELLENT CORN MUFFINS:
These are the best corn muffins I have ever made. My family really likes these.
1 1/2 cups all purpose flour 1/2 cup yellow corn meal l tbsp. baking pdr. 1/2 tsp. salt 1/2 cup butter at room temp. 1/2 cup sugar 2 lg. eggs 1 cup milk
Preheat oven to 425* and prepare muffin cups-spray or grease top edges as muffins rise above pan.
Thoroughly mix flour, cornmeal, baking pdr. and salt in med. bowl.
Cream butter and sugar in lg. bowl of mixer for 3 min. til light and fluffy. Beat in eggs one at a time then milk. On low speed, blend in dry ingredients just til combined.
Fill muffin cups and bake 20-25 min., or til they test done. Turn out on rack and serve hot.
OPTIONS: These I have came up with and they worked for my family. use 1/3 cup pure maple syrup and 2/3 cup milk for Maple-Corn Muffins Use l generous cup of sour cream and l pkg. Lipton Onion Soup mix a different muffin that is good with dinner.
