This is a prize winning "tea biscuit" or scone recipe that came out of Nova Scotia. Everyone says it's the best one they've ever tasted...Just try it!!
Here on the East Coast of Canada we love a cup of tea with a tea biscuit !

Scrumptious Scones:

Ingredients:

2 1/4 cups all purpose flour
2 Tbsp. granulated sugar
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup VERY COLD butter, cubed,
1/2 cup currants
1 cup buttermilk (I use 1 cup skim with 1 tsp. vinegar)
1 egg, lightly beaten

Directions:

You can do this both in the food processor or by hand...I've done both with success....THE KEY: DON'T OVERMIX.

Combine flour, sugar, baking powder, soda and salt. Add the cold cubed butter. With a pastry blender or with two knives, or in the food processor, cut butter into the flour mixture until the mixture looks the size of very small peas. Add the currants at this point.

Add the buttermilk and mix quickly until the flour mixture is completely moistened.

Place the dough on a floured (lightly) surface, knead the dough 10 times. Do NOT overknead as this makes the biscuits tough.

Roll out the dough until it is 3/4 inch thick. With a 2 1/2 inch cookie cutter or a glass, cut out biscuits. With a pastry brush, brush the egg, which has been lightly beaten,over the top and sides of biscuits.

Place on an ungreased cookie sheet and bake for 12-15 minutes at 425 degrees.

VARIATION: for Oat scones, substitute 1/2 cup rolled oats for 1/2 cup of the flour. Add 1 tsp. cinnamon and currants.

VARIATION: for Cheese scones or biscuits, omit sugar and currants. Add 1/4 tsp. cayenne pepper to flour mixture. Add 1 cup of shredded old cheddar cheese after butter has been cut into the flour mixture. (These are excellent)
