I haven't tried the recipe, but I don't think the shortening amount is meant to be used with the papaya (since it's candied and the instructions say to sprinkle the papaya shreds). Looking over the recipe, I don't know if it's just a repeated/typo of the above shortening amount or what's used to grease the bowl - since it stands alone with the papaya and plastic wrap. I would leave it out, but hopefully someone can help with a more definitive answer.
