This morning I had leftover pumpkin, so I developed this recipe --

Cloud 9 Pumpkin Muffins

2-1/2 C. self-rising flour
3/4 C. sugar
1 tsp. cinnamon
3/4 C. butter, chilled & cut up into small chunks
2 eggs
3/4 C. buttermilk
1/2 C. canned pumpkin

Stir together the flour, sugar & cinnamon. Cut in the butter 'til the mixture is like coarse cornmeal. Reserve 1/3 C. of this mixture (and add a pinch of cinnamon to this if you wish!). To the rest, add the remaining ingredients, stirring 'til smooth. Pour into greased muffin pans (it makes 6 jumbo muffins & 4 regular-sized muffins). Sprinkle the reserved mixture over the muffins Bake at 350° for 30 min. (Consider adding a panful of water to the shelf beneath the muffins; during the cooking process this ensures that the muffins have a very light & feathery texture.)
