Hi, its not exactly what you are looking for, but comes close. 4 eggwhites 1 cup cream 1 scant cup castor sugar 1 tbls icing sugar 60 g (2oz) walnuts,finely rum or brandy chopped 1 3/4 lbs canned sliced peaches (875g) 30 g (10z) butter 2 tbls flour cornflour (cornstarch) whipped creame for decoration
Whip the eggwhites untill stiff, gradually add the sugar and beat well after each addition.Fold in chopped nuts, cooled melted butter and flour and mix gently.Grease 3 baking trays and dust with cornflour, make a circle in the middle of each about 10 inches across, using a saucepan lid as a guide.Divide the mixture evenly among the 3 trays. Spread out and smooth carefully to fill the circle. Bake in a moderate oven (350-375 degr.) for 15 - 20 minutes until golden brown.Remove and loosen at once with a spatula, lift off trays and cool on wire trays. Poor creame into a bowl over another bowl of broken ice or cubes. Beat until slightly thickend, add icing sugar, a little rum or brandy and beat until stiff. Fold in the drained chopped peaches. Sandwich the 3 rounds together with cream filling, decorate with remaining peaches and cream.
