This is a moister banana bread.
cream together:
2/3 cup shortening
1 cup sugar
add and beat well:
4 eggs
combine:
3 1/2 cup all purpose flour
2 tsp. baking powder
1 tsp baking soda
1 tsp. salt
add to creamed mixture alternately with dry ingredients:
1 1/2 cup mashed over ripe bananas (wait till bananas turn dark)
1 cup apple butter
stir in:
1 bag milk chocolate chips
spoon batter into 2 loaf pans coated with baking spray. bake 350 degrees 30 -40 minutes just until toothpick comes out clean. do not overbake as you will dry it out. cool, remove from pans, wrap tightly in plastic wrap. let "mellow" overnight.
