Elegant Chocolate Log
1 1/4 cups sifted powdered sugar 1/4 cup plus 1 tablespoon flour 1/2 teaspoon salt 5 tablespoons cocoa 6 eggs, separated 1/4 teaspoon cream of tartar 1 1/4 teaspoon vanilla 1 tablespoon water
Sift the powdered sugar, flour, salt and cocoa together 3 times. Beat egg whites with cream of tartar until stiff. Beat egg yolks until thick and lemon colored. Beat in vanilla and water. Add sifted dry ingredients and beat into egg yolks until well blended. fold in beaten egg whites. Bake in greased, paper lined jelly roll pan in moderate ovevn (375 degrees) for 15-20 minutes. lightly dust clean dish towel with powdered sugar; loosen cake around edges with spatula. Invert on towel. Lift off pan and carefull peel off paper. with a sharp knife, cut off cake's crisp edges. roll up cake gently, from narrow end, by folding edge of cake over and then tucking it in. Continue rolling cake, lifting towel higher with one hand as you guide the rolling with the other hand, rolling the towel in the cake to prevent sticking. Let wrapped cake cool on rack. Wrap tightly in towel to hold its shape. Unroll cake on twoel and spread with filling. Roll back up. May frosting with favorite frosting or sprinkle with powdered sugar.
Filling: 5 tablespoons flour 1 cup milk 1 cup sugar 1/2 cup Crisco 1/2 cup butter or margarine (not diet) 1 teaspoon vanilla
Heat the milk and flour till thick, stirring constantly. Let cool until completllely room temp. Very impportant. Beat the sugar, Crisco, butter and vanilla till fluffy. Add the cooled flour mixture and beat again till light and fluffy. fill cake.
This cake can also be filled with whipped cream or ice cream. This is my sons favorite birthday cake. For Christmas time I take a fork through the frosting to make it look like tree bark (sort of). I make holly leaves and berries to decorate the top sometimes. And one time I crushed peppermint candy in fine pieces and folded into the filling. This is a well used recipe here.
