I filled a request for banana butter the other day, and while I was looking for those recipes, I came across one for Amaretto banana bread with Amaretto butter. I tried it right away and it is very good. Thought I'd share . . . I didn't have quite enough banana so I added applesauce; it really tasted wonderful, but I suppose it is a matter of taste. (And I had recently made Amaretto from a recipe posted here. Perfect.) I think serving this with banana butter may be better than the Amaretto butter. Good luck! Anyone have similar recipes?
Amaretto Banana Bread
1/3 cup butter 1/2 cup sugar 2 eggs 1 3/4 cups sifted all purpose flour 1/2 tsp. baking soda 1/2 tsp. salt 1 tsp. baking powder 1 cup mashed ripe bananas 4 tbsp. Amaretto 4 tbsp. honey 1/4 tsp. cinnamon 1/2 cup pecans
Cream butter and sugar. Add eggs and beat well.
Sift together flour, baking soda, salt and baking powder and add to creamed mixture alternately with bananas, blending well. Add Amaretto, honey, cinnamon and chopped pecans and blend well again. Place in one large buttered loaf pan or three small loaf pans or a 4-cup ring mold plus a small loaf fan.
Bake at 350 for 45 minutes. Cool; then dust with powdered sugar.
Amaretto Butter 1 stick (1/2 cup) butter 1/2 cup powdered sugar 2 2/3 tbsp. Amaretto
Whip in food processor until well blended.
