Atkins Low-Carb High-Protein Bread Basic Protein Bread
3 eggs, separated and at room temperature 2 tablespoons sour cream 2 tablespoons butter 1/2 cup soya powder 1 tablespoon baking powder
Heat over to 350°.
Combine egg yolks with all other ingredients. Mix well. Beat whites until stiff and fold into mixture. Put into buttered pan and bake for 50 minutes or until golden brown.
Yield : one loaf.
Store in refrigerator. ***************************** Irish Soda Bread
2 C flour, packed 1/2 salt or less 2 t baking powder, packed 1/4 r cream of tartar, packed 1/3 t baking soda, packed 1/4 C sugar, optional 1 C (approximately) buttermilk or milk w/1T vinegar handful of raisins to taste
Sift together dry ingrediants. Add raisins and wet with buttermilk. Preheat oven to 425°. Form a ball of the mixture, coating it with flour until you can pick it up without sticking to your hands. Place in slightly greased (buttered) pan, black iron if possible.(Baking stone works well, too with cornmeal spread ). Bake for about 10 minutes (425). Reduce oven to 350° and bake an additional 25 to 35 minutes. Slice and enjoy this simple bread. Note: Following the tradition of many women, the bread is blessed before baking. cultural and religious parties differ, but the ritual of blessing is common as bread has nourished throughout history. ***************************** No Yeast Whole Wheat Bread
1 cup whole wheat flour 1/2 cup teff flour 2 teaspoons baking powder 1/2 teaspoons salt 2 large eggs 1/4 cup water 2 tablespoons vegetable oil
Preheat oven to 425 degrees Sift flours, baking powder, and salt into a large mixing bowl In a separate bowl, beat eggs lightly Reserve two tablespoons of egg for brushing top of loaf Add water and vegetable oil to beaten eggs Pour liquid ingredients over flour mixture and stir well to make a smooth dough Turn out dough onto a floured surface and pat into a ball, handling as lightly as possible Roll into a log twelve inches long Place on oiled baking sheet Add few drops of water to reserved beaten eggs and brush over loaf Make diagonal slashes across loaf and bake for 35 minutes at 425°
Make rolls by cutting log into six equal pieces Form into flat rounds and place on baking sheet Brush tops with egg Bake for 20 minutes Serve warm or freeze for later
