Here are a couple of receipes using Bisquick:

Nut Bread

3 cups Bisquick baking mix
2/3 cup sugar
1/3 cup flour
1 egg
1 cup pear juice
1 tsp. almond flavor
1 cup chopped nuts

Combine baking mix, sugar, flour, egg and juice and almond; beat vigorously 1/2 minute. Stir in nuts.

Pour into greased 9" loaf pan and bake 55/60 minutes at 350 degrees, or until a tester inserted in center comes out clean. Cool in pan 15 minutes. Cool completely before slicing.

I omit the nuts and use 1 cup mini choc. chips.Pumpkin Loaf

1 cup sugar
1 egg
1 16 oz. can pumpkin
3 cups Bisquick baking mix
1 tsp. cinnamon
1/2 tsp EA. allspice, cloves, nutmeg

Blend sugar, egg and pumpkin in large mixer bowl on med. speed. Greaually beat in baking mix and spices on low speed.

Pour batter into greased 9" loaf pan and bake at 350 degrees for 70 minutes or until it tests done with a pick.

Cool in pan as above.

Peanut Butter & Chocolate Chip Bread

2 cups flour
2 tsp. baking pdr.
1/2 tsp salt
3/4 cup peanut butter
1/2 cup sugar
1/2 stick butter at rm temp.
2 large egge
1 cup buttermilk
1 cup chocolate chips

Thoroughly mix flour, baking pdr., bkg. soda, and salt in med. bowl.

Cream peanut butter, sugar, and butter in large bowl of mixer for 3 minutes, or til well combined. Beat in eggs, one at a time, then buttermilk. On low speed, blend in dry ingred. just til combined. Fold in chocolate.

Spoon into greased 9" loaf pan and bake at 350 degrees for 50 minutes, or until tester comes out clean.

Cool in pan for 15 min, then remove to rack to cool completely.

This one I have not tried, but it sounds good.

Bacon and Onion Bread

5/6 strips bacon
1 sm. onion, chopped
2 c. flour
1 tbsp. baking pdr
1 tbsp. sugar
1/4 tsp. salt
1/8 tsp black pepper
1/8 tsp. cayenne
2 large eggs
1 cup sour cream
1/4 cup butter, melted

Cook bacon in skilled til crisp. Drain on towels, then dice coarsely. Remove all but 2 tbsp. of fat. Add onion and cood for 2 min. or til tender.

Mix flour, bkg. pdr. sugar,sale, pepper and cayenne in lg. bow. Whisk eggs, sour cream and butter til blended; stir in bacon and onion. Pour liquid mix over dry ingred. and fold in just til combined. Do Not overmix.

Spoon into greased 9" loal pan and bake at 350 degrees for 50 minutes or til it tests done. Cool in pan for 10-15 min, then remove to rack to cool completely.Hope these sound good to you. A good cookbook for muffing and quick breads is titled "All the Best Muffins and Quick Breads" by Joie Warner. It was created and produced by Flavor Publications, Inc., 208 E. 51st St., Suite 240, NY, NY 10022. I believe I found it a couple of years ago in Brentano's and it should still be available. It has a lot of very good receipes.
