I don't know if this will help but I often bake with cornmeal and use all of them in a recipe. The texture will be a bit different. I bought some stone ground and it was a heavier texture. I hope this is a help. Whatever you can get, use....Ukrainians use cornmeal in a lot of things. My mom had many recipes and she got her cornmeal from many sources.
