Just found this recipe. I will try it once my bananas turn black. I wonder if I can just bake half size...

Banana Cake
2 1/4 c flour
1 1/4 c (superfine/caster)sugar
2 1/2 t baking powder
1/2 t baking soda
1/2 t salt
1/2 c unsalted butter -- softened
1 1/2 c mashed very ripe bananas (The skin of banana should be BLACK.)
2 eggs
1 t vanilla

Mix together the flour, sugar, baking powder, baking soda and salt. Sift into
large mixing bowl. Add softened butter, 1/2 cup bananas and eggs. Beat 2 min.
Add remaining bananas and vanilla. Beat 1 min. Bake in 2 well-greased 8" round
cake pans at 375 degrees for 25 min. Frost with cream cheese frosting.

Cream Cheese Icing (optional)

1/2 lb. powdered sugar -- sifted
1/4 c unsalted butter -- softened
8 oz. cream cheese -- softened
1 t vanilla

Cream Cheese Icing: Beat together well, all ingredients. Spread on cooled cake.
