Almond Crunch Cookies
(from Chef Wan's Sweet treats. p. 94)
Since Chef Wan is from Malaysia, all his recipes are written in metric system... Sorry for the inconvenience!
170g unsalted butter
200g powdered (icing)sugar
4 egg yolks
1 t. vanilla essence
1 t. almond essence
285g all-purpose flour
170g cornflour (corn starch)
140g ground almond
1/2 cup slivered almonds to decorate
a little eggy yolk, beaten, to glaze
Beat butter and sugar until creamy. Add eggy yolks, vanilla essence and almond essence.
Add both types of flour and ground almonds. Mix the dough well and chill for an hour before rolling out.
Cut into desired shape with a cookie cutter. Top with slivered almonds and glaze with egg yolk. Bake for 12 - 15 minutes at 175C/350F until golden.
