Sheri - I, too, was making these delicious but adding too many calories to my intake breads every 10 days. I got tired of the starter hanging around, so I experimented with ingredients one day, and came up with this recipe, and it tastes just like my starter-ed breads. It also only makes one loaf, so my husband's co-workers are not inundated with breads either! Janet
2 cups all purpose flour 1 cup sugar 4 tsp. baking powder 1-1/2 tsp. cinnamon 1/2 tsp. salt 1/2 tsp. baking soda 1 cup buttermilk (or 4 tblsp. powdered buttermilk and 1 cup water) 2 eggs 1/3 cup canola oil (or melted butter) 2 tsp. vanilla 1 pkg. vanilla instant pudding ( or flavor of your choice) 1/2 cup chocolate chips, raisins, etc. (optional)
Preheat oven to 350¡. Grease bottom only of a loaf pan.
In a large bowl, combine dry ingredients. Combine all wet ingredients and blend into dry. Beat 3 minutes on medium speed of electric mixer. Pour batter into prepared pan.
Bake at 350¡ for 45-55 minutes, until toothpick comes out clean. Cool in pan 15 minutes, then remove to wire rack and cool completely.
