OATMEAL-BLUEBERRY MUFFINS
1 c. plus 2 Tbsp. flour 6 oz. oatmeal, uncooked 1/3 c. plus 1 Tbsp. sugar, divided 1 Tbsp. baking powder 1/2 tsp. salt 1 c. milk 1 egg 1/4 c. vegetable oil 1 tsp. cinnamon 1 c. blueberries
Bake at 425 degrees. Serves 12. In medium mixing bowl combine flour, oats, 1/3 cups sugar, baking powder and salt. In small mixing bowl using a fork, combine milk, egg and oil; add to flour mixture and beat until all ingredients are blended. Fold in blueberries. Pour into lined baking cups about 2/3 full. Combine remaining tablespoons of sugar with the cinnamon and sprinkle evenly over muffins. Bake for 20 to 25 minutes or until toothpick comes out dry. |
