KUCHEN

My mother has used this recipe for years and so have I. This is quite a large recipe. Divide it in about a 1/3 if wanting to make just a kuchen.

FOR THE SWEET DOUGH:
2 1/2 cups warm water
1 cup sugar
1 cup oil
6 eggs
1 Tbsp. lemon flavoring
1 Tbsp. orange flavoring
1 Tbsp. Instant yeast
10 cups flour, divided use
1 1/2 tsp salt
FOR THE TOPPING:
6 to 8 apples*
Streusel (recipe follows)

Mix first 6 ingredients in a large bowl. Add some of the flour and the yeast. Add salt and the rest of the flour. This makes a soft dough, great for Kuchen. Add a little more flour for sweet rolls, so it can be handled more easily. Let rise in a warm place until double in bulk.

For kuchen take about 1/3 of dough and spread in a greased 11x15-inch cake pan, and let rise in a warm place.

Peel and slice about 6 to 8 apples and arrange in rows on the dough. Sprinkle streusel on top.

Bake in a 350 degree F oven about 45 minutes or until apples are baked.

STREUSEL

1 1/3 cups flour
1 cup brown sugar
1/2 cup butter

Mix together to form large crumbs and spread over fruit before baking.

*Almost any fresh fruit can be used for Kuchen, Italian prune plums, sliced peaches, apricots or pitted cherries.
