For white wedding cakes, I had this tip from a pro baker she uses Duncan Hines mix, adds a little liquor to it, Amarito, about 1/4 cup to the mix. Between layers spread thin layer of raspberry filling (purchase from a cake supply shop). Bake cake several days ahead, cover tight, refrigerate. Frost cold, easier. Can set out for 2-3 days until the event. This is her most requested cake. I have made it this way and it's quite good!
