This cake is really delicious, it is for canned sour cherries.
1 cup all-purpose flour 1 cup sugar 1 tsp. baking powder 1/2 tsp. salt 1 tbsp. shortening 2 eggs 1/2 cup chopped walnuts 1 can (1 lb.) sour pie cherries, drain and reserve juice CHERRY SAUCE: 1/3 cup sugar 1 tbsp. corn starch
In small mixer bowl, combine flour, sugar, baking powder, salt, shortening & eggs. Beat at med. speed till well blended. Fold in nuts & 1 cup cherries. Spread in 9" square pan, greased on bottom only. Bake at 350 degrees for 35-40 min. (till top springs back.) Serve warm or cold with cherry sauce on top.
CHERRY SAUCE:
In small saucepan, combine sugar, corn starch, reserved juice & remaining cherries. Cook over med. heat, stirring occasionally until thick and clear. If desired, add 2-4 drops red food coloring.
