Not sure- was your bowl squeaky clean- any grease on the bowl will result in poor meringue. Also were your egg whites at room temp?? I find that if mine are right out of refig they don't hold as well- also beat till really stiff. Hope this helps- good luck! Are you baking the meringue or broiling it????
I've never had good luck with broiling-just a thought.
