This is one of our favourites : I wonder if it tallies with your idea of light.
No-bake lemon cheesecake
2 cups sweet biscuit crumbs
4oz butter melted
1 packet lemon jelly crystals,1/4 cup boiling water
1 dessertspoon grated lemon rind, 1/4 cup lemon juice
12 oz can evaporated milk, well chilled
8 oz cream cheese softened
1 cup superfine sugar
1 teasp vanilla
Make biscuit crumb case in the usual manner, line springform tin and bake 10 mins in mod oven. Cool and chill before filling :
Dissolve jelly crystals in boiling water, add lemon rind and lemon juice, cool slightly Beat evap. milk till thick. Beat cream cheese till smooth, blend in sugar, vanilla and beaten evap. milk. Fold in warm jelly mix. Fill biscuit crumb case. Hope you like it.
