I am not familiar with any native American cookbooks, but I do have this recipe.
Indian Fry Bread
2 1/2 cups flour
1 TBSP baking powder
1/2 tsp salt
1 TBSP vegetable shortening
1 cup milk
oil for deep frying
Mix together dry ingredients. Cut in shortening & then add milk. Shape dough into a long cylinder & cut into 8 equal parts. Form into 8 pieces of dough shaped like 6 inch tortillas. Fry in oil until golden brown.
