7-UP CAKE PLUS FROSTING
7-Up Cake:
2 sticks margarine 1/2 c. Crisco 3 c. sugar 3 c. all-purpose flour or cake flour 5 eggs 1 tsp. lemon extract 1 (10 oz.) bottle 7-Up
Frosting: 2 egg yolks 1 1/2 c. sugar 1 stick margarine 1 c. crushed pineapple, drained 1 c. coconut
Cake: Cream margarine and Crisco together, add sugar and cream well. Add eggs, one at a time, beating well after each addition. Add flavoring and combine. Sift, then measure flour. Add flour and 7-Up alternately, beating after each addition. Bake in greased and floured 10-inch tube pan (or layers). If tube pan is used, bake at 350 degrees for 1 1/2 hours. Do not open oven door while baking. Frosting: Cook egg yolks, sugar, margarine and pineap- ple until thick, then add coconut. Frost between layers, top and sides of cake. Cake is better if allowed to "age" for at least one day before cutting.
