Carrot Muffins
Wet mix: 3 eggs 1/2 cup sugar 1/2 cup oil 1 cup plain unsweetened yoghurt 1 cup grated carrot 1/2 cup chopped walnuts
Dry mix: 3 cups self-raising flour 1/2 teaspoon baking soda 1 teaspoon cinnamon
Preheat the oven and grease the muffin pan. Beat together the eggs, sugar, oil and yoghurt. Add the carrot and walnuts. Fold in the previously combined dry mix. Place in muffin pans. Bake 200 degrees cent. 20 to 25 minutes. Makes 12
