I got my KitchenAid fairly recently, so I have read the instructions recently. It mentions that mixing times may need to be adjusted. I found that my best poppyseed cake recipe had the same "sad" problem until I cut the mixing time a bit. Maybe experiment with that. Also, I agree with the others who warned that you have to scrape up from the bottom.
