Hi, im new to your group but it looks like lots of fun. Im a farm wife and mother of 4 with the last one just now graduating from highschool. I still have 2 in college and 1 is a teacher of 1st graders. My boys like this receipe especially well and I sometimes add a light cream cheese topping.
4 eggs,2 cups sugar,1 16oz can pumpkin, 1 1/2cups vegetable oil, 3 cups flour, 2 tea. baking soda, 2 tea. baking powder, 1 tea. salt. 2 cups chocolat chips
Mix beaten eggs, sugar,pumpkin, and oil until smooth. Combine dry ingred. and add to mixture.mix well. fold in chips. fill muffin cups 3/4 full, and bake 400*for approx. 16 mins. Cool in pan 10 mins.remove to rack. makes about 24 standard size muffins
