Yeast & Wheat Dairy Free Bread

COMBINE:

1/3 cup honey,
2 Tbsp. lemon juice,
2 tsp. grated orange rind,
3 Tbsp. oil,
1 1/3 cups water,
3/4 tsp. salt,
1 tsp. cinnamon,
small amounts of ginger, cloves, allspice, anise.

Beat until smooth.

Stir seperately in another bowl:

2 1/2 cups rye flour,
1/2 tsp. baking soda,
2 1/2 tsp. baking powder.

Add the dry ingredients to the wet ingredients, stirring to well mix.

Add:
1/2 toasted, chopped almonds.

Bake in a greased 8"X4" loaf pan at 350 degrees for about 45 minutes to an hour. Allow to cool before slicing it.
