Mandarin Orange Scones
Ingredients: 1 ¾ cup flour 2 tablespoons sugar 1 ¼ teaspoons baking powder ¼ teaspoon baking soda ½ teaspoon salt 6 tablespoons butter (3/4 stick) ½ cup buttermilk Zest of one orange (save 1 teaspoon for glaze) 1 can (11-oz) Mandarin oranges, drained and chopped (save 8 mandarin slices for garnish)Glaze: 1 cup powdered sugar 1 teaspoon reserved orange zest Enough juice from orange to make glaze consistency (about half of orange) 3 drops orange flavoring Preheat oven to 425 degrees By hand, mix dry ingredients, cut in butter until dough is pea size, add buttermilk, chopped mandarin orange pieces and orange zest. Dough will be sticky. Turn out onto well-floured board, add flour as needed to make manageable. Knead lightly a couple of times and form into 8-inch round. Place round on greased cookie sheet. With a spatula, score 8 wedges on the round and bake for 12 to 16 minutes or until golden brown. Remove from oven and glaze. Glaze: Combine powdered sugar, zest, orange flavoring and enough freshly squeezed orange juice to make a runny glaze. Pour glaze over rounds; garnish each wedge with one mandarin slice. Makes 8 scones. |
