Pumpkin Orange Muffins: Orange adds zip to the pumpkin.
1 3/4 cups all purpose flour 2 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp salt 1 tsp cinnamon 1/4 tsp. nutmeg 1/4 tsp ginger 1/4 tsp. mace 2/3 cup brown sugar 1/4 cup chopped raisins 1/4 cup chopped walnuts 1/4 cup vegetable oil 1/2 cup milk 1/2 cup orange juice 1 egg 1 tsp orange peel or more 3/4 cup canned pumpkin
TOPPING MIXTURE:
1 tsp. pumpkin -pie spice 2 Tbsp. white sugar
Sift dry ingredients into large bowl. Stir in brown sugar, raisins and walnuts. Beat together oil, milk, juice, egg, peel and pumpkin. Pour into dry mixture. Stir to blend. Fill muffin cups. Sprinkle topping mixture on batter and bake.
Temp. 400 degrees F. Time 18 to 20 minutes Makes 12 large muffins.
Try 1/2 cup sunflower seeds instead of raisins and walnuts.
