OATMEAL RAISIN COOKIES
1/2 c. water 1 c. raisins 1/2 c. oil 3/4 c. brown sugar 1/4 c. white sugar 2 eggs 1 c. whole wheat flour 1 c. all-purpose flour 1 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. nutmeg 1/3 tsp. allspice 1/2 tsp. salt 2 c. quick cooking rolled oats
Combine water and raisins in a saucepan and heat until the water begins to boil; turn off heat and cool. Combine oil, sugar and eggs; beat well. Add raisins and all liquid to mixture. Add dry ingredients. Beat well and stir in oats. Drop by rounded teaspoonfuls onto oiled baking sheet. Bake at 350 degrees for 10 to 12 minutes or until delicately brown.
