ISO: Pineapple Upside Down Cake

I am doing a luncheon for 80 and need a recipe for Pineapple Upside Down Cake. I used to make them a lot many years ago but have not lately and I cannot believe there is not a recipe in any of my cookbooks. If you have a good one please post it. Thanks.
