My favorite - not necessarily for a wedding cake but for a cake where you want chocolate whipped cream frosting--everyone loves this.
1/2 cup cocoa 1 1/2 cups powdered sugar 1 tsp vanilla 2 cups of heavy cream
Whip till really stiff.
You can hollow out the inside of a chocolate chiffon cake baked in a tube pan, fill with the frosting and frost top.
Grate baking chocolate over the top and you have a filled cake that is great!!!
