This is an interesting request. I have never seen a chocolate cake recipe that called for two cups of oil. I did a little looking and found a recipe that at least calls for equal amounts of coffee and oil, but only one cup. Perhaps your recipe was doubled? This recipe only has 2 cups of flour. I don't think a recipe with two cups of flour could support more oil, it would fall flat without a lot of stuff like nuts, carrots or zucchini in it.
Mocha Chocolate Cake
2 cups flour 1 teas. salt 1 teas. baking soda 3/4 cup cocoa 2 cups sugar 1 cup vegetable oil (Crisco) 1 cup strong, hot coffee 1 cup milk 2 eggs 1 teas. vanilla Sift together dry ingredients (including cocoa) in a mixing bowl. Add oil, coffee, and milk; mix at medium speed for 2 minutes. Add eggs and vanilla; beat 2 more minutes. (Batter will be thin.) Pour into 2 greased and floured round 9"x1 1/2" cake pans. Bake at 325 for 25-30 minutes. Cool cakes 15 minutes before removing from pans. Cool on wire racks.
