Hi jan,

i am curious about the browines you bought as the American brownies should be "chocolaty, dense, chewy and fudgy". But you are looking for one recipe that's the opposite! My guess is that you could try with a tested recipe and bake it a bit longer than suggested and you should get texture you prefer. (Most brownies should be underbake a little and only cut it up after the whole lot is completely cooled.) here is a recipe from Nestle for a larger amount. I do have another one that I use produces slightly smaller amount (baked in a 7" square pan). Please do have a look and see if it will work for you. Or if u r interested in the other one, pls. let me know.

Easy Double Chocolate Chip Brownies

2 cups (12-oz. pkg.) NESTLÉ TOLL HOUSE Semi-Sweet Chocolate Morsels (chips), divided (into batches)
1/2 cup (1 stick) butter or margarine, cut into pieces
3 large eggs
1 1/4 cups all-purpose flour (plain flour)
1 cup granulated sugar (castor sugar)
1 teaspoon vanilla extract
1/4 teaspoon baking soda
1/2 cup chopped nuts (I've used peacans, walnuts, and hazelnuts.)

PREHEAT oven to 350°F (175C). Grease 13 x 9-inch baking pan. (**Do NOT line paper in pan.)

MELT 1 cup morsels and butter in large, heavy-duty saucepan over low heat; stir until smooth. Remove from heat. Stir in eggs. Stir in flour, sugar, vanilla extract and baking soda. Stir in remaining morsels and nuts. Spread into prepared baking pan.

BAKE for 18 to 22 minutes or until wooden pick inserted in center comes out slightly sticky. Cool completely in pan on wire rack.

(**I think you need to bake it lightly further but bear in mindthat brownies do get harder once cooled. you don't want to end up with "brownie rocks!)
(The australian cup measure is slightly lager than the us's, but most recipes i have tried [from the stats] works all right if you simply follow them (w. your aussie cups). The only problme rises when a recipe calls for T. as the australian one is 1 T. = 20ml and the usa version is 1 T. = 15 ml. This will particularly affect the result of baked goods when it's to do with the baing soda or baking powder.)
