in addition to julie's lemon mascarpone cake and muffins, i also made this last weekend. i searched tkl and didn't see this recipe so i thought i might as well post it out. maybe some of you are also crazy about bananas! happy july the 4th for my american friends!

Banana Cream Pie
8 servings
Allow 4 hours preparation + cooking

100g shredded/desiccated coconut
60g quick-cooking porridge oats, uncooked
75 butter, softened (divide into 45 g & 30 g portions)
**It’s ok to use lightly salted butter as coconut welcomes a bit of salt to enhance the flavor.
750 ml milk
45 g cornflour
100g castor sugar
3 egg yolks
3 large bananas
150 ml, double/whipping cream
Toasted flaked almonds, to decorate

Preheat oven to 150C.
In a shallow 8-9” pie dish, mix coconut, oats, and 45 g butter. Pat coconut mixture on to bottom and up sides of pie dish to line evenly. Bake the shell (on the lower shell of the oven) for 15 minutes or until golden; cool on wire rack. (I use a 9” glass Pyrex dish.)

In a medium saucepan, combine milk, cornflour, sugar and 30 g butter. Cook over medium to low heat, stirring constantly, until mixture boils and thickens, boil for 1 minute further. Remove from heat and stir in egg yolks. Mix well.

Peel 2 bananas (or enough to cover the whole pie shell). Slice into 5mm (1/4”) thick. Line cooled pie shell with sliced bananas; pour custard filling over bananas. Cover custard filling tightly. Refrigerate until cold.

In a small bowl, whip double/ whipping cream till stiff peat form. With a palette knife, evenly spread whipped cream over custard filling. Cover and refrigerate till ready to serve.

To serve: Slice remaining bananas. Decorate pie with banana slices by placing them into a ring in the center. Sprinkle toasted flaked almond on the top.
(As banana discolors fast, I normally don’t decorate this pie with it unless I am sure that the pie is going to be finished at once. I usually just sprinkle the flaked almonds or shave some best eating "dark/milk" chocolate I can get into rather large chocolate curls. When I use the chocolate curls, I usually omit the nuts.)
