PIGNULATA (PIGNOLATA, IMPIGNOLATA)
This is a recipe that my partner's Sicilian-American family makes for every holiday. Sabrosisimo!!
Onions, sliced (1 large per loaf) Sweet Italian Sausage (l pkg for 3 loaves) Pizza dough Kalamata or similar pitted olives, cut in half Egg white, beaten Sesame seed
Preheat oven to 375 degrees F. Grease cookie sheets or pizza pan.
Saute sliced onions (1 medium–large onion per loaf).
Sausages: take out of casing and saute in pan.
Roll out dough like a pizza.
Mix onions, sausage, and olives together and on dough like a pizza
Roll dough together (like a jelly roll) and fold in ends. Flip over so that sealed loaf seam is on the bottom on the pan.
Brush loaf with egg white to make golden brown. Sprinkle top of loaf with sesame seeds.
Bake in oven at 375 degrees F for approximately 30 minutes
Raising /preparing dough: Pizza dough can be in the fridge for a day or two before using. Place each loaf in a greased bowl and cover with plastic wrap.
Frozen dough: If you need to accelerate rising of dough place bowl in a roasting pan with hot water.
