CZECH POTATO FLATCAKESAbout 2 pounds cold potatoes, boiled in their skins and then peeled 1/2 teaspoon salt About 2/3 cup sifted flour Lard or butter for spreading Sweet version of *Damson cheese* Grated cream cheese Sour cream or plain yogurt for decoration Finely grate the boiled potatoes onto a board. Season with salt and gradually add the sieved flour. Work into a smooth doughy mixture. Cut into equal sized parts and roll them into flat rounds on a floured surface. Using a cast iron griddle on a gas burner, or a dry Teflon pan, slowly cook the flat cakes on both sides.* When cooked, spread them with a little melted lard or butter and stack them on a plate set above a pan of hot water, to keep them warm. Spread the flatcakes with damson cheese, sprinkle with grated hard cheese and serve them decorated with a blob of sour cream or plain yogurt. *Damson cheese is not a cheese, but a thick fruit mixture. **Potato flatcakes can also be fried in oil.
